Hot & Cheesy Buffalo Wing Baked Gnocchi

2 tbsp olive oil
1 package store bought gnocchi
2 tbsp butter
2 tbsp all-purpose flour
2 cups 3.25%MF Milk
1 cup crumbled Durham Cheesemaker Red Hot Stilton*
1 1/2 cups grated mozzarella, divided
1 1/2 cups Italian seasoned bread crumbs
Celery leaves for garnish
Preheat oven to 400ºF.
Heat oil in a large frying pan over high heat. Add gnocchi and cook for 3-5 minutes, or until golden brown and crisp. Remove to a mixing bowl.
Return the pan to the heat, and reduce to medium-high. Add butter and flour and cook for 3-5 minutes, or until fragrant. Slowly add milk while continually whisking. Whisk until sauce has slightly thickened and remove from heat (if sauce appears too thick, simply whisk in more milk). Add cheese, being sure to reserve 1 cup of the grated mozzarella. Add gnocchi to the pan and stir to combine.
Transfer gnocchi mixture to a greased baking dish, top with remaining mozzarella and bread crumbs, and bake in the centre of the oven until golden on top and bubbling around the edges.
Let stand for 10 minutes, top with fresh celery leaves and serve.

*Please note - Peter’s cheese is currently not for sale. To substitute for the Red Hot Stilton, simply use the same amount of crumbled blue cheese and 1/4 cup of your favourite buffalo wing sauce.
